Fruit Whip After a Happy Afternoon


I had an unexpected day off on Wednesday for which I was so grateful! It was sunny, brisk, and everything this city needed in a Wednesday. Instead of lazing about I decided to catch up on some cleaning, and other tasks that don’t get done thoroughly while I’m working. It was really nice to give the home some TLC! Afterwards I felt like trying a new recipe so I went to my cutest cookbook, The Winnie the Pooh Cookbook, to see what I could find.


I found a treat that was most fitting for the day: Fruit Whip After a Happy Afternoon. Could that be more perfect?

Fruit Whip After a Happy Afternoon
Adapted from The Winnie the Pooh Cookbook
Ingredients:
1. Cut the banana in half. Slice 1 half of the banana into thinnish slices. Set aside. Take the other banana half and mash it up with a fork in a bowl.
2. Add the whipped cream and vegan honey to the mashed banana and gently fold all of the ingredients together. 
3. Top the fluffy mixture with the sliced bananas and a drizzle of the vegan honey if you’d like.
4. Eat while pondering your favorite happy afternoon.

*You could really use any fruit you like. I just happen to love bananas.

Easy Biscoff Honee Buns + 100th Post


This is my 100th post! I made this celebratory picture just now in my true form. No make up retouches, no cute cat distractions. You know….to show how real I am.

I’ve had such a great time coming into my own here. To all those who have ever commented (ever!), I really truly appreciate you with all my heart. Since this blog is proof that my mind is always on food, I present you with another recipe adapted from The Winnie the Pooh Cookbook: Easy Biscoff Honee Buns. These are crazy easy and adaptable. The original recipe calls for nuts, but I was in a mood and decided that crushed up Biscoff cookies was (at that moment) more desirable. It was a good choice.



Easy Biscoff Honee Buns
Adapted from Easy Honey Buns from The Winnie the Pooh Cookbook
Ingredients: 
  • 1 package of frozen or refrigerated dinner rolls (or make your own – about 16oz worth)
  • 2 biscoff cookies, crushed (or 2 tablespoons chopped nuts)
  • 2 tablespoons Bee Free Honee or agave nectar
  • 1 tablespoon non-dairy milk
1. In a small bowl combine the crushed cookies (or nuts), honee or agave nectar and milk. Set this mixture aside.
2. Bake the rolls according to the package or recipe directions. Five minutes before they are done pull them out of the oven and brush the nut mixture evenly over the tops.
3. Return the rolls to the oven to finish baking. 
4. Serve warm with a hot cup of coffee or tea.

Tomato Soup from The Winnie the Pooh Cookbook


While wandering around Powell’s Books in Portland I saw that they have an entire section dedicated to Disney cookbooks. I was so excited because for years I’ve been looking for The Winnie the Pooh Cookbook. Not only did they have the updated version, but also a copy of the out of print original. They were both under $10, but I opted for the updated version. The recipes in the original are a little too 70s weird for me.



The first recipe I made was the Tomato Soup. It was creamy, comforting, flavorful and so simple. A great introduction to the book. You never know with novelty cookbooks, but so far this one is great.




Tomato Soup
Adapted from The Winnie the Pooh Cookbook
Ingredients:
  • 4 cups diced tomatoes, fresh or canned
  • 2 scallions, sliced
  • 1/4 teaspoon dried thyme
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon fresh parsley, finely chopped
  • 1/2 – 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup unsweetened nut milk
  • 1/2 cup water (optional)
1. In a medium-large pot combine the tomatoes, scallions, herbs, salt, pepper and the 1/2 cup water if the tomatoes aren’t juicy. Simmer for 30 minutes then remove it from the heat.
2. Heat up the milk in a large pot, but do not boil.
3. With a stick blender, puree the tomato soup. Slowly strain the tomato soup into the milk. Stir the soup in the strainer really thoroughly to get as much liquid out as possible. 
4. Serve.

At the end of each recipe they have excerpts from Pooh books. Tomato Soup’s excerpt:
