Round-Up: 7 All-Vegan Cheesy Recipes!

When I was a kid I hated cheese. I wouldn’t touch mac and cheese, I peeled the mozzarella off of my pizza, and I avoided the round slices of cheese product that came in my beloved Lunchables. But now that I’m vegan I’m all about it.

Well, that’s an exaggeration – I’m not all about it. There are certain commercial vegan cheeses that I love like Miyoko’s Aged English Smoked Farmhouse or Follow Your Heart’s Provolone Style Cheese. However, my favorite way to eat vegan cheese is in recipes like these.

This soup was created for last year’s Vegan MoFo. The prompt was to write about a food from childhood, and as a kid I was obsessed with Schlotzsky’s Wisconsin Cheese Soup. Despite my hatred for cheese, I could not get enough of this dish. I would crumble a mountain of saltines into my bowl, and sit back to savor every gooey drop. This vegan version is every bit as cheesy, smokey, silky, and rich as the OG, making it pure comfort in a bowl.

Vegan Queso Blanco
I wrote this recipe because I was desperate for a mild cheese to eat on my tacos. This queso blanco crumbles and smears, and will never overpower anything you put it on. It’s meant to add richness to your dish while cutting through the spice. Make this for tacos, and you won’t regret it.

Cashew Quesos are a dime a dozen, but this one is special because it’s loaded with beans, pico, and guacamole. Based on a specific queso from a local 24-hour restaurant, this dish is a meal in itself.

These super cheesy crackers truly hit the spot in my heart where Cheez Its used to live! While I adore Earth Balance Cheddar Flavor Squares, my cracker recipe is just on another level of cheesy. Plus they’re really fun to make.

Ok so pesto doesn’t scream cheesy, but this recipe uses Follow Your Heart’s Parmesan Style Cheese, a product that is having a real moment in our home. We’re obsessed with both the shredded and grated versions, and hope to one day find the wedge.

This mac and cheese may be hippy dippy in nature, but it’s so creamy and warming that you won’t even care. We love to eat this in early fall when our CSA is overflowing with butternuts.

These ridiculous empanadas are the perfect way to round out this round-up! Loaded with carbs on carbs, they are every bit as ludicrous as they are tasty. To quote the post:

The dough was crisp on the outside and warm and soft on the inside, creating a perfect pocket for the rich bacon mac and cheese filling. Each bite was texturally fun and super tasty to boot. They are silly, and the gimmick did wear off pretty quickly, but they remained quite delicious all the same.”

This round-up made me hungry! Thankfully I’ve got a box of Earth Balance Macaroni and Cheese in the pantry with my name on it.
