Spring & Summer Highlight: Recipes and Pins


Spring has finally Sprung in Austin, and I’m more than ready to enjoy it! I’m back to outdoor morning workouts, snacking on strawberries and meals of salad instead of soup. Finally! To share my excitement I’m highlighting some of my favorite Spring and Summer recipes. I can’t wait to remake them all!

1. Tequila and Lime Peaches and Cream

Could this be more Texan? Texas peaches are my favorite local fruit, and they go perfectly with this limey whipped coconut cream and tequila sauce. Yum!

2. Mitad Y Mitad Tortillas

I want tacos all the time when it’s warm out, and homemade tortillas make tacos even more dreamy. Not only are they easy to make, but they’re worlds better than anything packaged and preserved. Truly!

3. Sriracha Vegetable and Ramen Stir-fry

This stir fry is great made with the wonderful fresh produce that Spring provides.

4. Homemade Graham Crackers and Icing

Graham Crackers and Icing might be my favorite summer dessert. My Grandma used to pack these as pool snacks when I was kid, and I finally got around to making them from scratch last year. We’ll definitely be making these for our first trip to the pool this summer!

5. Vegan Honey Mustard Chicken Salad

This Beyond Meat “chicken” salad was made for a very special brunch last year. It’s super light and extra yummy when scooped up with crackers. This is going to make a great lunch when it gets really warm out!

6. Milk and Honey Rice Krispie Treats

I’m a sucker for rice krispie treats, and these are my all time favorite variation. They’re gooey from the almond milk and flavored beautifully with the Bee Free Honee. Speaking of Bee Free Honee – I was able to score some of their new flavors at Texas Vegfest last weekend. Amazing!

7. Brown Rice Horchata

Using Crystal’s recipe from VeganExplosion.com I was able to make Horchata hella quickly and with brown rice. Brown Rice Horchata will happen again, and it will happen alongside a million tacos.

While trying to really immerse myself in Spring (and savor every bit) I revisited some great recipes from other blogs and started pin, pin, pinning away on a new board. I want to always have a home base for Spring and Summer inspiration:
