White Chocolate Birthday Cake Cookies

Are you ready for these Vegan White Chocolate Birthday Cake Cookies? I thought I was ready when I was making them, but at bite #1 I realized I was not prepared for how incredible they would be. These are my new favorite cookie by a long shot, and I know that’s a bold statement.

I love birthdays, and am known for taking them to the extreme. There’s a running joke in my family that I have birthday months, and about a month before his own birthday my husband starts reminding me that he likes laid back celebrations, and would appreciate it if I would not make him the center of some narcissistic birthday clown show. This will be my 9th year celebrating his day of birth, and I think I’m finally able to accept that.

It’s hard for me! I love celebrating.

My love for birthdays obviously manifests itself in food. There are a million and a half recipes and products out there of birthday cake flavored treats from pancakes to macarons (and M&Ms, Oreos, Goldfish, pudding, Poptarts….), and my inner 10 year old has been holding out on a vegan makeover for far too long.

Every recipe out there for birthday cake-flavored whatevers calls for (duh) birthday cake mix. I don’t use cake mix for anything, so I came up with my own Not-For-Baking Cake Mix just to make birthday cake flavored foods. I am so excited about this addition to my kitchen! The cake mix tastes just like yellow birthday cake, and it’s going to be the base of many wonderful treats until I’m sick of it. Which will be never.

The possibilities for vegan birthday cake flavored desserts are seriously endless, but these cookies are a great start. Eating one is like eating a mini handheld cake, and the white chocolate chips are like little pockets of frosting. These are for serious sweets lovers, y’all!

White Chocolate Birthday Cake Cookies

  • 1 1/4 cups all purpose flour
  • 1 tablespoon cornstarch
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup non-dairy margarine (I used Earth Balance), melted
  • 1/2 cup granulated white sugar
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons non-dairy milk
  • 1 batch Not-For-Baking Cake Mix (Recipe Below)
  • 1/4 cup vegan white chocolate chips
  • 2 tablespoons vegan sprinkles
1. Preheat the oven to 350 degrees. Line a baking sheet with parchment paper, and set aside for later.
2. In a medium sized bowl combine the flour, cornstarch, baking soda and salt. Set aside.
3. In a separate, smaller bowl mix together the melted margarine, sugar, vanilla, and milk. Pour this wet mixture into the flour mixture and stir to combine. Fold in the cake mix, white chocolate chips and sprinkles.
4. Drop the cookies by the tablespoon onto the parchment lined baking sheet. Make sure to keep them 2 inches apart! Bake for 10-12 minutes until brown around the edges. For best results let them sit for 5 minutes before transferring to a cooling rack. Allow them to cool on the rack for at least 10 minutes before eating. Repeat this step until you’re out of dough.

Not-For-Baking Cake Mix

  • 1/2 cup vegan white chocolate chips
  • 1/4 cup all purpose flour
  • 2 tablespoons dry soymilk powder
  • pinch salt
  • 1 tablespoon unrefined coconut oil
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons vegan sprinkles (optional, but awesome) 
1. Place the white chocolate chips, flour, powdered soymilk, and salt in your food processor, and process just until the white chocolate chips are sufficiently pulverized.
2. Add the coconut oil and vanilla extract, and process until the mixture is thoroughly combined. It should be powdery like boxed cake mix.
3. Pour the mixture into a bowl and stir in the sprinkles. Set the mix aside until you’re ready to use it.
